Vanilla
Vanilla is the second most expensive spice after saffron. It was first cultivated by native Indians in Mexico who introduced it to the Aztecs. If possible, always buy the dried whole bean. The best beans are pliable and sticky. The flavor of the vanilla is in the seeds. Vanilla extract is made by chopping and soaking the vanilla in alcohol, aged and strained. The higher the alcohol content the more intense the vanilla flavor. If you, can avoid buying vanilla essence as its a synthetic product made from industrial byproducts.
Vanilla beans are best stored in an airtight container in a cool, dark place for up to 18 months.
