Allspice
Allspice has a warm fragrant aroma with notes of cloves, cinanamon and nutmeg. Allspice can be bought whole or ground. Most of the flavor is in the shell rather than in the seeds. Whole allspice can be stored in a dark airtight container for many years, whereas ground allspice will lose its flavour after 18 months. Allspice combines well with chili, cloves, coriander, garlic, ginger, mace, mustard, pepper, rosemary and thyme.
