Zucchini Fries with Chili Oil

Zucchini’s can be somewhat tasteless, and can take a good chunk of time to make them flavorful. I had a bunch of zucchini’s that I thought I would stuff with rice and meat, and then simmer in tomato sauce, but time got the better of me. Instead I opted to make zucchini fries. The chili oil I used to pan fry the “zuccs” gave them a light spicy flavor. (If you do not have chili oil, add chili flakes to the oil) Adding the coarse sea salt after frying enhanced the golden brown zucchini’s flavor. A great dinner for one!

Ingredients

2-3 zucchini’s cut into match sticks
1 tablespoon chili oil
¼ teaspoon coarse sea salt

Serves

Prep Time

35 minutes

Cook Time

8 minutes

Directions

Cut zucchini’s lengthwise, and cut in half to make matchsticks.

Sprinkle with salt and let sit for 30 minutes.

Heat chili oil in a non stick pan. Add zucchini, and pan fry until golden brown.

Sprinkle with coarse sea salt and serve warm.
