On our last night in Belize we decided to splurge. One of the guide books indicated that the Rendezvous Restaurant and Winery in Caye Caulker was a must. We decided to try it out. The only way to get to the restaurant was via a small boat. The boat picked us up at the dock and took us to the restaurant. I remember gazing at the stars—there was thousands of them. It was truly a magical night. This spicy beef salad was one of the dishes we selected. I was so excited to see it in the cookbook. It’s simple, yet the flavors are incredible. I can still taste the freshness of this dish.
Spicy Beef Salad

Ingredients
| 1 | pound sirloin or good cut of beef |
| ½ | red onion |
| 8 | fresh mint leaves |
| 12 | basil leaves |
| 2 | garlic cloves, minced |
| 1 | lime, juiced |
| ½ | teaspoon sugar |
| 2 | tablespoons fish sauce |
| ½ | teaspoon dried chilies |

Directions
Cut beef into small strips, about 1 inch by ¼ inch, and stir fry until medium. Mix lime, sugar, minced garlic, chili and fish sauce in a bowl and mix to dissolve sugar. Place cooked beef in sauce Garnish with basil, mint and onions, mix and serve
