Salmon Spice Rub Recipe

One of my objectives with my blog is to show you how you can break the habit of buying pre-packaged food. Breaking the habit will save you money and ensure you are eating fresher and healthier food. For example at my local grocery store today, one pound of Atlantic salmon was $6.99. The pre-packaged version—the salmon you see with all the herbs and spices already made for you was $13.99 a pound. That is double the cost!
Here is a simple and delicious rub recipe for your salmon, not only is it fresh, you know exactly what you put into it. Making your own rubs is a great way to save money, you won’t even notice the extra time spent as you will be rewarded with a delicious meal you can claim as your own.
When we were baking this, the aroma of the spices danced through the air tantalizing us. When we sat down to eat, the salmon was moist, delicious and the spices were incredible. The spices weren’t overpowering, and they really brought out the flavor of the salmon. You could taste the fennel, coriander, cumin and the star anise notes. Very tasty!
Ingredients

cup canola oil, plus 2 teaspoons for sheet pan |

side of salmon (approximately 3 pounds), pin bones removed (I bought enough for two, and had left over rub for next time) |

teaspoon kosher salt |
| 1 |
teaspoon fresh ground black pepper |
| 1 |
tablespoon whole coriander |
| 1 |
tablespoon whole fennel seed |
| 1 |
teaspoon whole cumin seed |
| 1 |
whole star anise pod |
| 2 |
teaspoons onion powder |
| 1 |
teaspoon garlic powder |
| ½ |
teaspoon cayenne pepper |

15 minutes and 30 idle time
Cook Time
10 -15 minutes
Directions
Rub sheet pan with the 2 teaspoons of oil and place side of salmon in pan. Salt and pepper salmon. Set aside.
Add coriander, fennel seed, cumin seed, star anise, onion powder, garlic powder and cayenne pepper to a blender. Turn blender on high and process until whole spices become powder. With blender running, pour in ⅓ cup canola oil and blend until well combined. Stop blender to brush down sides of container, if necessary.
Brush salmon with spice mixture. Allow salmon to sit at room temperature for 30 minutes.
Preheat oven to the high broiler setting. Place salmon in the oven 6-inches from broiler. Cook until salmon reaches an internal temperature of 131 degrees F. This will take approximately 15 minutes, but will vary with different ovens. Remove from oven and let rest for 10 minutes, and then serve immediately. Note that the internal temperature of the fish will a rise a little as carry-over cooking occurs.

if you use an old electric coffee grinder (you can find them at thrift stores for under $10) you can grind small amounts of sprices finer than the blender or food processor”
