Goat cheese is one of the most versatile cheeses around. Like a supporting actor, it provides stability, versatility and, most of the time, can take the show on its own. You can pretty much add any combination of ingredients and the outcome will be delicious.
For this recipe, a mixture of black and green olives are warmed with sprigs of thyme, a scoop of lemon zest, olive oil, and chili flakes. Set aside for 10 minutes to allow the flavors to get to know each other. Then, pour the olives on the goat cheese for a delicious appetizer.

(4-to-5oz) fresh goat cheese medallion or 2 smaller goat cheese buttons |

Directions
Heat olives, thyme, oil, lemon zest, chili flakes and pepper in a small skillet or saucepan over low heat until fragrant (do not simmer). Cool to room temperature. Pour olive mixture on goat cheese.
