Ever get tired of salad? Greens, greens, and more greens? Well, as far as I’m concerned, there’s nothing better than a salad with a little grain thrown into the mix. Think about Caesar salad with big chunky croutons, or a taco salad with crunchy corn chips. The Italians have panzanella (bread salad),and the Lebanese have fattoush salad. It was one of the first meals I learned how to make when I was growing up.

This salad is much easier and quicker to prepare than a panzanella or a tabbouleh salad, because you roughly chop all the ingredients. In fact, fattoush salad looks like it’s just thrown together: torn romaine lettuce, large bite-sized pieces of cucumbers, tomatoes, green bell peppers, scallions, mint and cilantro. And then the salad is topped off with baked or fried pita bread.

What makes this salad unique is the spice in the dressing: sumac. Sumac is a key Middle-Eastern spice with a soft, tart flavor. This delicate tartness brightens up the salad and compliments the olive oil and freshly squeezed lemon juice. The result is a bright summery salad that has a rustic feel to it, Lebanese style.

Ingredients

2 large pita breads
2 baby romaine lettuces, chopped into bite size pieces
2 tomatoes, chopped
2 small Persian or Lebanese cucumbers, chopped
4 scallions, chopped
1 green bell pepper, cut into large dice
1 large handful mint, roughly chopped
1 large handful cilantro leaves, roughly chopped
dressing
¼ cup lemon juice
¼ cup olive oil
1 tablespoons sumac
¼ teaspoon salt
teaspoon pepper

Directions

Preheat oven to 350. Put the pita bread on a baking sheet and bake for 5 minutes, or until golden and crisp. Remove from the oven and cool. Break into ¾ inch pieces. To make the dressing, mix the lemon juice, oil and sumac together and season to taste.

In a serving bowl, toss the lettuce, tomato, cucumber, scallion, bell pepper and herbs together. Crumble over the toasted pita bread, drizzle with the dressing, and serve.

Yum my all time favourite salad. Thanks for posting! I must admit I don't like green bell pepper so I plan to take it out. Also nice to add radishes thinly sliced and a handful of parsley, roughly chopped..just like the locals.
