My friend Rebecca needed a gift for her grandma, she wanted to give her something perishable and that she would enjoy. Her grandma is Italian, so I created this home made present just for her. The combination of chili flakes, coriander, cumin and olive oil is a great way to turn your everyday olives into a delightful treat.
P.S The retirement home where she lives has asked me for the recipe, since it was such a hit.
Ingredients

garlic cloves, thinly sliced |

tablespoons lemon juice |
| 3 |
cups cured black olives |
| 1 |
tablespoon chili flakes |
| 3 |
teaspoons ground coriander |
| 2 |
teaspoons ground cumin |
| 2 |
cups olive oil |

4 cup jar

10 minutes
Directions
Soak the garlic slices for 24 hours with the lemon juice. Drain and mix in a bowl with the olives, chili flakes, coriander, and cumin.
Spoon the olives into a 4 cup mason jar and pour in the olive oil. Seal and marinate in the refrigerator for 1-2 weeks before serving at room temperature. The olives will keep for a month in the fridge.
